Waste not, want not, even if you have to wash the meat
Strange title, I know, but it’s a lesson I learned today that I thought everyone should learn. As most of you know, I’m from South Carolina, the home of Carolina mustard based BBQ sauce. It’s really pretty much unlike any BBQ sauce you’ve ever tasted (unless you were raised there too), and takes a little getting used to (sort of like boiled peanuts and fried okra).
My neighbor is from New Jersey, which tells you a lot if you’re talking about BBQ. I made her some pulled pork once with some of my special “secret” sauce, and she loved it. The problem was, she wanted to make it. She’s a nice enough lady (for a NJ Italian Republican), so I helped her pick out the meat and gave her my recipe – well, not my real recipe, but the easy-peasy one that you can’t mess up, no matter how hard you try. All you have to do is mix Kraft Honey BBQ Sauce and yellow mustard in equal parts. Easy, right? Evidently not. She screwed it up…BADLY.
This morning, she asked if I wanted a little of her BBQ to take home. She was telling me it “tasted too much like mustard”, so she put in more BBQ sauce. She didn’t measure anything, which was probably the problem in the first place. Then she put in brown sugar. Why, I can’t imagine, but she did. Then, because she didn’t have the common sense to cook it on high enough heat for it to thicken before time to eat, she put in cornstarch to thicken it. No, I’m not joking…cornstarch.
I brought the concoction home, and tasted it — and immediately spit it out! There was so much sugar in it that it was all you could taste. I tried doctoring it, but it didn’t work. I tried adding more mustard, some vinegar, still too much sugar.
In years past, I would have consigned the entire bowl of nastiness to the garbage, but I’ve changed, so I washed it. Yep, washed it. Put it into a colander and washed all the sauce off of it. I mixed a little of my easy-peasy sauce, added a tad of vinegar, and boiled it down. It turned into a mushy mess, but it tasted o.k., so I ate it, so as not to waste it. It was, after all, good meat.
The moral of this story is that if someone gives you something totally unpalatable, and you can doctor it to make it work, do it. This doesn’t just apply to food, it applies to all things. If someone gives you a gift, accept it with grace, and make it into what you would want it to be, if at all possible. If life gives you something you don’t think you can possibly tolerate, make it into something you can. In other words, make what you’re given into an ingredient, not a finished product.
Of course, this isn’t always possible, but the story of my friend’s swamp is a good example. In Florida, it rains almost every day in the summer, and I’m not talking about short afternoon showers. Last week, water was actually standing in my yard, which is hard since it’s pure sand. You can imagine how much rain it would take to saturate pure sand to that point.
My friend has gardens. She also has a back yard that is so boggy in the summer that most things she planted drowned. In the winter dry season, it was a beautiful place, full of flowers and lovely shrubbery. In the summer, it was a swamp full of dead and decaying annuals and dying shrubs. She tried everything to fix it, hauled in tons of sand, but for some reason, that back yard wants to be a swamp. So she dug up all her flowers and shrubs and moved them to the front yard, and created bog gardens in the back, with hundreds of native plants dug from roadside ditches. She added cannas and gingers that do well in bogs, and planted a red maple, which loves boggy soil. She built raised walkways out of free pallets, placed on beds of gravel. It’s mostly green in the winter, and some of the plants die back, to be replaced with potted annuals for color. Then the summer rains come, and it rises from the dead and puts on a display that rivals any back yard garden you’ve ever seen, a spectacular blend of colors and shapes, complete with a host of singing frogs, flitting butterflies and dozens of brightly colored dragonflies.
My friend wanted gardens. Nature gave her a swamp, so she filled it with swamp flowers. She says now that her swamp is a gift, that made her stretch out into growing things she never would have thought of in a million years.
So don’t waste what is given to you, turn it into an ingredient for something good….even if you have to wash the meat.

Frugal Tip of the Day – Dilute Your Hand Soap
If you dilute your liquid hand soap 50/50 with water, there is no need to wet your hands before washing, thus saving money on your water bill. Hey, maybe pennies, but even pennies count, and if you have a large family with kids that wash their hands a lot, it could add up.

Is Home Ownership Right for You?
Studies show that the road to riches starts with owning your own home. It seems
nobody was ever able to amass much wealth without first locking up that first piece of real estate. There is something to be said for that, I suppose, but how many of us are actually going to be rich? Not over 2% of us, actually, depending on what you call rich.
My thought is that it isn’t so much that the wealthy MUST own a home, it just looks sort of strange for a wealthy person to be renting. After all, appearances are everything when you have money, aren’t they?
While people who are in the middle and upper middle class may have no problems with home ownership, there are a lot of drawbacks to someone in the lower middle class owning a home. Home ownership can be very expensive, especially if you own an older home. Maintenance and repairs can really eat a hole into your budget and can drive you quite insane worrying about them in times when you don’t have any money to accomplish this.
Home ownership brings pride, it’s written, but can’t you be proud of yourself in a rental? What is it that you’re really so proud of? Is it owing someone tens of thousands, sometimes hundreds of thousands, of dollars? I don’t think that being in that sort of debt is anything to be proud of.
The worry of foreclosure certainly doesnt’ make you proud. I’m pretty much embarrassed now that I’ve fallen on hard times that I may actually lose this house. I’m also aggravated that in being forced to sell it in its present state, and with the housing market as it is, that I am actually not going to make a great deal from it. Again, with the housing market the way it is, I may lose it before I can sell it, although I doubt that. I’ll find some way to make the payments, although the taxes and insurance will be difficult.
So with all that in mind, I’m pretty much over home ownership. I just want to rent a little one bedroom apartment somewhere where I have no yard to care for, no repairs or maintenance to worry about, and no hassle of trying to sell it if I should suddenly have to find another place to live.
My point? Owning your own home isn’t for everyone, so don’t feel guilty if you choose to rent. In some cases, it may be more economical and fit your lifestyle better.
What if you are new in your chosen career, and really feel like you won’t be staying in your current job forever? You need to be free to move about the area, or even the country and sometimes the world. Being tied to a piece of real estate puts a crimp in those plans. I have a friend who was transferred with their job to another state. They put their house up for sale, but couldn’t sell it before they left, and eventually, the house went into bankruptcy since they couldn’t afford to support two homes. This happens more often than you would expect. Even if you aren’t foreclosed on, you may be forced to sell the house at a price that just allows you to break even to save your credit. After putting years and sometimes thousands of dollars into a house, this can be quite traumatic.
Some people don’t like taking care of a yard. Living in Florida, I see this quite a bit. Older retirees do not want the hassle and expense of yard upkeep, and end up living in condos or mobile home parks to avoid it. As a gardener who is not getting any younger, I find I’m watching the yard I worked so hard to fill with beautiful flowers going to hell in a handbasket due to my inability to work it like I used to. I don’t see myself having a large yard after this, and an apartment is looking better all the time. My gardening may be relegated to growing African Violets in my living room, which would be fine with me.
So there are many cases for home ownership, and many against. You have to choose what is right for you, and not let other people’s opinions push you into doing something you will regret later, as I have. I wish every day that I was just renting this house, so that I could just pack up, give notice, and go.

Latest Nigerian Scam – This is a good one!
I guess since most of their other scams weren’t working anymore, they came up with this one. The Nigerian government is now going to REFUND YOU money you were scammed out of. And guess what? It’s only going to cost you $180!!
What’s sad is that people who HAVE been scammed will fall for this and get scammed AGAIN!

Homemade Tortilla Chips
I’ve never tried these, but I found this, and it looks pretty quick and easy. I’m going to try them tonight, so I’ll let you know how it goes.
Homemade Tortilla Chips
1 (12-count) package corn tortillas
Vegetable oil for frying
Salt (optional)
Preheat oil in a deep-fryer to 360*F (180*C).
On a cutting board, stack 3 to 4 tortillas and using a sharp knife, cut into 8 wedges. Repeat with remaining tortillas. Separate any that may stick together.
Add a handful of tortilla wedges to the hot oil, stir to separate, and fry until crisp and golden brown. Remove and drain on a brown paper bag, lined with paper towels. Salt immediately, if desired. Remove to serving bowl. Repeat procedure with remaining tortilla wedges.
Store unused portion at room temperature in an airtight container.
Makes 96 tortilla chips.
Note: Recipe can be increased as desired.
Variation: For Baked Tortilla Chips, lightly brush whole tortillas with vegetable oil. Cut into wedges as above. Place chips in a single layer on a greased baking sheet and sprinkle with salt, if desired. Bake in a 400*F (205*C) oven, for about 10 to 12 minutes or until crisp and light golden brown, turning chips halfway through the baking time. Transfer to paper towels and cool completely.
